White Wine Sauce

This quick and simple sauce is great for fish or white meats like pork or chicken or even just over potatoes or pasta.

White Wine Sauce


15g / 1/2 oz butter
3 shallots/2 medium onions, chopped finely
300ml / 1/2 pint white wine
300ml / 1/2 pint chicken stock
400ml / 3/4 pint creme fraiche


1. In a medium saucepan melt the butter
2. Add the shallots/onions, cook until soft
3. Add the white wine and bring to the boil
4. Leave to reduce to half
5. Add the chicken stock and reduce again by half
6. Add the creme fraiche and continue to reduce the sauce until thick and creamy

Makes : 300ml
Preparation Time : 5 mins
Cooking time : 40 mins
