Corn Bread

I was sure that I'd already posted my recipe for corn bread, but realised as I searched for it today on my blog, to go with the Chilli con Carne tonight,  it was nowhere to be found.

So here it is, quick and easy corn bread.

Corn Bread


2 eggs
1/2 L/1 pint/2 cups milk
4 tblsp cooking oil
320g/11 oz/2 cups cornmeal
2 tsp baking powder
2 tsp salt
240g/9 oz/2 cups flour


1. Beat eggs, milk and oil.
2. Add dry ingredients and stir quickly and thoroughly.
3. Bake for 50 minutes at 160°C/325°F/Gas Mark 3.

Serves : 4 - 6
Preparation Time : 5 mins
Cooking Time : 50 mins
