I love this recipe. Traditionally eaten on a Monday with the leftover vegetables from the Sunday dinner.
Ingredients
4 large potatoes, peeled chopped and boiled
1/2 cabbage, par boiled/leftovers
leftover carrots, broccoli, brussel sprouts chopped finely
2 tblsp butter
salt & pepper
1 onion, chopped
Method
1. In a large frying pan melt the butter
2. Fry the onion until soft
3. Add all the vegetables, season with salt & pepper
4. Cook until golden brown and the pan bubbles and squeaks!
Serves : 4-6
Preparation time : 10 mins
Cooking time : 20 mins
