Udon Noodle Soup
This a great quick and tasty recipe. I recommend you take a trip to your local Chinese supermarket for the ingredients, it's worth it to get that authentic oriental kick. I also recommend you stick with Udon noodles as they are a thicker variety and so make this dish more wholesome.
Ingredients
5 spring onions, chopped finely
1 pint vegetable stock
10 thai basil leaves, shredded roughly
500g Udon noodles
2 tblsp fish sauce
2 tblsp soy sauce
1 tblsp seasme oil
1 tsp Chinese Five Spices
1 small tin sweetcorn, drained
1/2 tsp ginger (optional)
Method
1. In a large saucepan, heat the seasme oil gently
2. Add the spring onions, ginger and five spices
3. Stir gently for 1-2 mins
4. Add fish sauce, soy sauce, stir again for 1-2 mins
5. Add the stock, sweetcorn and basil
6. Simmer over a low heat for 3 mins
7. Add the noodles
8. Simmer until noodles are cooked through and softened
Serves : 4
Preparation time : 5 mins
Cooking time : 10 -15 mins

Hi Charlotte,
Delicious recipe - the 5 Spice and sauces go really well together. I think maybe a bit more liquid would help, though - 500g of udon is a whole lot and quickly absorbs 1 pint.
