Red Jam

Red Jam
1 tblsp olive oil
8 tblsp sugar
1 red bell pepper, chopped finely
1 small tomato, chopped finely
200g strawberries, chopped finely
1 red hot (2 medium hot) chilli, chopped finely


1. In a small shallow pan, heat oil gently
2. Add pepper, tomato, strawberries and chilli
3. Cook until soft
4. Lower the heat and add sugar
5. Simmer until sauce absorbed
6. Leave to cool for 3-4 hours
7. Transfer to sealed containers, freeze (1 year) or cool (2 months)
