Giant's Eye

Giant's Eye
My Dad used to make me this for breakfast when I was little, but it can also be a light evening snack or just for fun at teatime for little ones.


1 egg
1 slice of bread
Vegemite or marmite


1. Fry the egg, sunny side up
2. Toast the bread
3. Spread the vegemite or marmite onto the toast
4. Cut out a circle in the middle of the toast (use a cake/pie cutter)
5. Place the toast over the egg, yolk in the hole

It's as simple as that!

Experiment with the recipe by replacing the egg with half a tomato lightly grilled, or if you're not a fan of vegemite/marmite, spread soft cheese onto the toast instead.
