These half quiche half pies are my flatmate’s speciality. They are the most delicious pies I have ever tasted and fantastically simple to make. I’m not ashamed to admit that given the chance I can easily eat a whole one to myself!
Hearty enough to keep out the cold, yet light enough to give yourself a break from the richness of Christmas nosh.
Here’s my favourite
Ingredients
1 roll short crust (pie crust) pastry
200g grated cheese (cheddar/emmental/guyere)
20cl crème fraiche
4 medium eggs
1 large onion, chopped
500g uncooked lardons
Method
1. Preheat the oven to 200°C
2. Mould the pastry in a shallow pie/cake dish
3. Warm in the oven for 2-3 mins
4. In a mixing bowl add onion, half the cheese, crème fraiche, eggs and lardons
5. Mix well
6. Pour the ingredients evenly onto the pastry
7. Sprinkle over the rest of the cheese
8. Cook in the oven until golden brown (10-20 mins depending on your oven)
Serves : 4
Preparation time : 5 - 10 mins
Cooking time : 20 mins
Substitute the lardons for tuna or tomatoes or anything that tickles your fancy! However, if you want to add vegetables, par boil them first otherwise the pie will be burnt by the time the vegetables are cooked through.
