Cheesy Potato Skins
Ingredients
5 large potatoes
400g / 14oz grated cheese
200ml / 6 fl oz creme fraiche
salt & pepper
2 tbslp oil
Method
1. Cook the potatoes in the microwave on full power for 30 mins
2. Heat the oil in an oven proof dish at 200C
3. Add the potatoes and some salt and bake for a further 30 mins
4. Once the potatoes have nice crispy skins and are cooked through, remove from the oven and cut in half
5. Spoon out the potato making sure to leave the skins in tact
6. In a bowl mix the spooned out potato with the creme fraiche, salt & pepper and about 100g of the cheese
7. Place on a baking tray and sprinkle the rest of the cheese all over the potatoes
8. Return to the oven until the cheese is melted and bubbly
Makes : 10 skins
Preparation time : 10 mins
Cooking time : 1 1/4 hours
