Bacon and Bean Soup
Ingredients
225g/8 oz haricot, pinto or butter beans
2 litres/3 1/2 pints water
100g/4 oz bacon, chopped roughly
1 Cos lettuce, shredded
2 egg yolks
150ml/1/4 pint sour cream
1 tblsp vinegar
salt & black pepper
small bunch of fresh dill (optional)
Method
1. In a large saucepan add the beans, bacon and water
2. Bring to the boil
3. Skim off any froth, leave to simmer for about 2 hours, until the beans are very soft
4.Mash the beans slightly
5. Stir in the lettuce and black pepper and cook for a further 5 -10 mins
6. Mix together the egg yolks, cream and vinegar and add to the soup
7. Add the dill, salt & pepper
8. Stir together over a low heat for 2 - 3 mins
Serves : 6
Preparation time : 5 mins
Cooking time : 2 1/2 hours
