Banana Curry Soup

Banana Curry Soup


25g/1 oz butter
1 onion, chopped
1/2 tsp curry powder
700 ml/1 1/2 pints chicken stock
350g/12 oz ripe bananas, peeled and chopped
2 tblsp lemon juice
150 ml/5 fl oz single cream


1. In a large saucepan melt the butter
2. Add the onion, cover and sweat for 5 mins
3. Stir in the curry powder and cook for a further 30 seconds
4. Add the stock, bananas, lemon juice and salt to taste
5. Bring to the boil, cover and simmer for 15 - 20 mins
6. Stir in the cream and serve piping hot

Serves : 6
Preparation time : 5 mins
Cooking time : 30 mins
