Mushy Peas

Mushy Peas

2 tsp olive oil
1 onion, chopped
450g frozen baby peas, thawed
80ml thin cream
80ml vegetable stock
salt & pepper ground black pepper


1. Heat the oil in a medium saucepan over a medium heat
2.Add the onions, stir until slightly golden
3.Add the peas, cream and stock, bring to the boil
4.Reduce the heat to low and cook for a few minutes stirring constantly until sauce thickens
5.Remove from heat and mash slightly using a fork or back of a spoon
6.Season with salt & pepper

Serves : 4
Preparation : 10 mins
Cooking time : 10 mins
