Last night I was so tired and hungry I must have gone from the cupboards to the fridge at least 10 times to try and find some inspiration! In the end I decided on an old favourite Hot Pasta Salad. I love doing this because it takes no effort and is made with whatever you’ve got in the fridge. Here’s the one I made :
Ingredients
1 medium onion, chopped
2 cloves garlic, chopped finely
1 tsp basil
2 tsp parsley
5 tblsp olive oil
10 crab sticks, chopped
1 red bell pepper, chopped
1 large tomato, chopped
20g mozzerella, chopped
1 tsp sea salt
250g spaghetti
Method
1. In a large saucepan of boiling water, cook the pasta.
2. In a small saucepan heat the olive oil
3. Add the onions, garlic, basil and parsley
4. Stir constantly until just starting to brown
5. Drain the pasta and return to the pan (but not back onto the stove)
6. Add the pepper, crab sticks and tomato.
7. Pour over the onion and garlic mix
8. Add the mozzerella and sea salt
9. Mix together until the pasta is completely covered with the oil mix and the mozzerella has started to melt.

I served with a warm baguette. Have a go yourself with whatever is in your cupboard, I'm sure you'll be pleasantly surprised.
