Tomates Fromagées

Ingredients

4 large/8 medium/2 packs cherry tomatoes, (depending on party numbers) pitted and halved
50g Mozzarella, chopped finely
1 tsp black pepper
1 tsp cayenne pepper
1 tsp Dijon mustard
25cl white wine
4 cloves garlic, crushed
50g grated cheese

Method


1. In a small saucepan add wine, black pepper, cayenne pepper, Dijon mustard and garlic
2. Warm gently
3. Add mozzarella
4. Stir until thickened
5. Stuff the tomatoes with the mixture
6. Place stuffed tomatoes on a baking tray
7. Sprinkle with grated cheese and drizzle with olive oil
8.Place under a moderately heated grill until just brown

Preparation time : 5 mins
Cooking time : 10 mins

OK, this is definitely going on our holiday list. I adore tomatoes and Dr. Andrew Weil says they're one of the top ten foods to eat for good health. This sounds delicious!
